- Citrus vinaigrette dressed mesclun with fresh goat cheese and pistachio gremolata
Course Two: Crab Bisque
- Smooth as satin crab bisque topped with fresh crab crostini

Spinach and Goat Cheese Stuffed Chicken Breast
- Served over parmesan risotto and sautéed asparagus and finished with a light garlic butter pan sauce

- Served with roasted fingerling potatoes, sautéed asparagus and finished with a mushroom demi-glace
or Bourbon Dijon Glazed Salmon
- Oven-roasted with herbed barlotto and sautéed asparagus
or Roasted Portabella and Fresh Fettuccine
- Tossed with roasted red peppers, cherry tomatoes, zucchini and asparagus tips in a parmesan cream sauce
